Head Chef (Houston)

Position Summary: 

We are seeking a Head Chef for Tubs Poutine, Houston’s very first restaurant to specialize in the French Canadian dish of poutine.

Poutine has exploded in popularity around the world, but is a new concept in this neck of the woods. We are the first mover in a market which we believe has vast potential. Though French Canadian in origin, we feel poutine is one of those rare foods with universal appeal.

As our Head Chef, you will literally have a blank canvas to play with: poutine offers limitless possibilities in fusing different cultures and cuisines and flavor profiles. We want to see where your soaring imagination goes. (Our current menu offers creative twists on Southern, BBQ, Vietnamese, Burmese, and Canadian, etc., cuisines. Meanwhile, we are developing specials that incorporate classic dishes from Korean cuisine and New Orleans culture.)

We are a scrappy start-up venture and our Head Chef should be an initiative taker and comfortable with wearing many hats. Like every start-up, there are risks but also incredible upside and creative freedom. We opened our doors to the public last June. The path upwards lies ahead. We are looking for a Head Chef with the creative FIRE to partner with us and grow Tubs and our vision from a seedling to a full-fledged success, with locations around Texas and eventually, the country.

Responsibilities: As Tubs Poutine’s Head Chef, you will be spearheading the execution of all aspects of a creative culinary vision which you will design in conjunction with the owners. Yes, we want your ideas; we want your passion!

Your chief responsibilities will encompass the following:

Manage and oversee all aspects of food preparation and production.
Oversee all staff in ensuring highest food quality standards.
Employ costing/pricing strategies, including creative strategies for sourcing; optimizing food ingredients for efficient, full use; and forging fruitful partnerships with vendors and suppliers.
Meet or exceed budgeted labor and cost of goods targets to ensure profitability.
Develop and continually re-engineer menus for profitability, seasonality, and creative vision, including regular specials; menus shall include those for on and off-site sales as well as delivery.
Own all aspects of design, development, execution and documentation of recipes.
Manage and supervise all staff; participate as needed in hiring, disciplinary actions, evaluations, etc.
Manage inventory processes, including checking in deliveries, waste/shrinkage controls, organizing storage areas, weekly counts, paperwork and proper forecasting of par levels based on sales data.
Manage procurement of all food and supplies.

· Ensure compliance with all regulatory requirements for food handling, alcohol, sanitation and cleanliness.

· Implement staff training to ensure up-to-date knowledge and compliance with food handling and safety and sanitation principles.

Maintain regular cleaning & maintenance schedule for all kitchen areas and equipment.
Collaborate closely with FOH manager and owners in financial management of restaurant, including monitoring of profitability and cost of goods, menu performance, and efficient operations.
Develop and oversee catering and special events programs.
Collaborate closely with FOH manager and owners in marketing and community development initiatives.
Collaborate closely with FOH manager to act as point person/contact for all vendors, suppliers, 3rd party platform partners.

EXPERIENCE REQUIRED:

First and foremost: Authentic love and passion for food and hospitality.
Second: we do not want a ‘Gordon Ramsey’ in our kitchen. Our Head Chef will, at all times, lead with kindness, respect, integrity and professionalism.
Prefer minimum 3-5 years experience as a Head or lead chef, including kitchen managerial experience.
Experience in kitchen staffing, costing/pricing strategies, financial management (managing labor and food costs) and creating profitable menus.
Computer experience with Microsoft Office, Square POS, Excel and Asana project management.
Passion for leading and inspiring others!
People person: outstanding communication skills, both written and oral; create fruitful relationships with vendors, guests and greater community.
Willing to serve as ‘face’ of Tubs Poutine, i.e., doing frequent table touches, interacting with media; appearing in social media promotional content, etc.
